Ingredients
1cupsteel-cut oats
2 1/2cupsunsweetened almond milk
4Medjool dates, pitted
1teaspooncinnamon
1/2teaspoonvanilla extract
1tablespoonbutter or margarine
Instructions
Add the almond milk, dates, cinnamon and vanilla to a blender. Blend until smooth. You may have some small pieces of dates left, this is okay, they'll break down during cooking.
Add the oats, blended milk and butter to the Instant Pot. Stir everything together.
Set the Instant Pot for 7 minutes on high pressure using manual mode or multigrain mode. Set the steam release handle to "sealing".
Once done, turn off the Instant Pot and do a natural pressure release for 10 minutes. After 10 minutes, release the remaining steam.
Stir the oats and add more milk if desired. The oats will continue to thicken as it sits. Serve with more cinnamon, butter and other toppings of choice.
Notes
To make the oats sweeter, top with maple syrup or use more dates. You can use another kind of milk if preferred.
