Rudolph Nutella Donuts

Kids (and grown ups) will love these festive donuts! Made from hazelnuts, dates, cocoa powder and vanilla, they're gluten-free, refined sugar-free and vegan! They're ready in less than 45 minutes and they're fun to decorate. Add a dried cranberry for a little Rudolph nose and pretzels for antlers. They would make a great healthy Christmas eve project!

Ingredients

  • 1 cup Medjool dates, pitted
  • 1 cup hazelnuts
  • 2 tablespoons cocoa powder
  • 1/2 tablespoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened or dark chocolate
  • Pretzels and dried cranberries for decorating

Instructions

  • Preheat oven to 350F.
  • Roast your hazelnuts on a baking sheet for 6 minutes.
  • Add your hazelnuts, dates, vanilla, cocoa powder and salt in a food processor. Process for 1-2 minutes until the dough holds together when pressed.
  • Line a cookie sheet with parchment paper. Form 6 donuts by making cylinders with the dough and sticking both ends together. Place them on the prepared sheet. Set in the freezer 10 minutes.
  • Meanwhile, melt the chocolate in a small bowl (I used the microwave).
  • Dip the top of each donuts in the chocolate. Top each of them with a dried cranberry (Rudolph nose) and stick two half pretzels on top of each reindeer (see picture).

Notes

Store in an airtight container in the fridge or in the freezer.
