2tablespoonsgoat cheese,crumbled
1/2ripeavocado
1/2tablespoonpepitas (pumpkin seeds),roasted
Lemon Tahini Sauce
1tablespoontahini
1/2tablespoonlemon juice
1tablespoonwater
Salt to taste
Instructions
Preheat oven to 350ºF or use a toaster oven.
While the oven is preheating, prepare your lemon-tahini sauce: In a small bowl, whisk together your tahini and lemon. The mixture should thicken. Whisk in the water. Add more if the sauce becomes too thick.
Spread your goat cheese on top of the bread and bake with the pepitas (on the same baking sheet) for 6 minutes. Set to broil for 1 minute, keeping an eye on the pepitas.
Remove from the oven and top with sliced or mashed avocado, lemon-tahini sauce and your toasted pepitas.
Notes
Feel free to double this recipe to make it a filling meal. You can also add one more slice of bread to make it a sandwich or serve it with a salad on the side.Bake them longer if you like a crispier toast, just keep an eye on your pepita seeds so they don't burn.
