Ingredients
1cuppitted Medjool dates
1cuppecans
1cuprolled oats
1/4cupshredded coconut,unsweetened
1/2teaspoonground cinnamon
Pinchground nutmeg
1/4teaspoonsalt
1tablespoonmaple syrup(optional)
1tablespoonwater,more or less as needed
Vegan chocolate chips,dark or semi-sweet (optional for topping)
Instructions
Add the dates, pecans, oats, coconut, cinnamon, nutmeg and salt to a food processor. Process until the mixture is crumbly.
Add the maple syrup (if using) and process until combined. Add water if needed, 1/2 tablespoon at a time and process until the mixture sticks together when pressed.
Press the granola bar mixture at the bottom of a glass dish. Cut into 9 bars, or more for smaller portions. Drizzle with chocolate if desired.

Store the granola bars in an airtight container in the fridge for up to 1 week, or in the freezer for longer. They can be eaten straight from the freezer!Use certified gluten-free oats if needed.You can use quick oats if that's what you have on hand.You might not need to add water if you use maple syrup and if your dates are very soft and sticky. If your dates are dry and you skip the maple syrup, you will likely need 1-2 tablespoons of water.Feel free to adjust the spices to taste. These are also delicious with a small amount of pumpkin spice mix.
