Ingredients
1/4cupcashew butter,smooth
1/2cupmaple syrup
1/2teaspoonvanilla extract
1 1/2cupalmond flour
3/4cupoat flour
4tablespoonscoconut flour
1/2tablespoonmatcha powder
1/4teaspoonsalt
1/4cupshredded coconut,or more as needed (optional)
Instructions
Add the cashew butter, maple syrup and vanilla extract to a mixing bowl. Stir until smooth.
Add the almond flour, oat flour, coconut flour, matcha and salt. Stir until combined.
Form 12 balls with the dough. Roll each ball in shredded coconut. Enjoy!
Notes
Don't change the flours in this recipe. They each serve a specific purpose and using different flours will affect the texture. If the bites are too sticky, add more coconut flour, no more than 1 tablespoon at a time. If they're too dry, add more cashew butter or maple syrup (avoid adding too much) as needed.Use ceremonial matcha for the best flavor and color. Non-ceremonial matcha works, but will result in light-brown energy bites with a subtle grass-like flavor.I highly recommend using cashew butter in this recipe. Other nut or seed butters might add an overpowering flavor.Store the matcha energy bites in an airtight container in the fridge. You can also keep them in the freezer for longer. They can be eaten straight from the freezer, but will be harder.
