Ingredients
1cupcashews,raw or dry-roasted, unsalted
1cupMedjool dates,pitted
1teaspoonvanilla extract
1/8teaspoonfine grain sea salt
1-2tablespoonsmini chocolate chips
Instructions
Add the cashews, dates, vanilla and salt to a food processor and process until the mixture sticks together when pressed. Add the chocolate chips and pulse a few times to combine.
Roll the mixture into 10-12 balls. Store them in an airtight container in the fridge or freezer.
Notes
If your energy bite mixture is dry, add water, 1-2 teaspoons at a time until the mixture sticks together. The mixture should stick together when pressed, but it shouldn't be overly sticky.Make sure to use vegan chocolate chips to make this recipe vegan. I use Enjoy Life mini chocolate chips.To make this recipe fruit-sweetened, swap the chocolate chips with 1/2-1 tablespoon of cacao nibs.
