Chocolate Chip Peanut Butter Energy Bites

Simple chocolate chip peanut butter energy bites made in one bowl in under 15 minutes. These energy bites are sweetened with maple syrup and require no food processor! They can be made vegan by using vegan chocolate chips and gluten-free with certified gluten-free oats.

Ingredients

  • 1 cup rolled oats
  • 1/4 cup flax seeds, ground
  • 1/4 cup almond flour
  • 1/2 cup peanut butter, smooth
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup chocolate chips

Instructions

  • Add all the ingredients in a medium bowl. Stir until combined.
  • With slightly wet hands, roll the dough in the palm of your hands to make 10-12 balls.
  • Store in an airtight container in the fridge or freezer.

Notes

I use natural, salted peanut butter. If your natural peanut butter is unsalted, you can add a small pinch of salt to the recipe.
You can use regular chocolate chips or mini chocolate chips. Use milk, dark or semi-sweet!
If you don't have almond flour, you can try adding more flax seeds. You can also process other nuts in the food processor to get a flour. Walnuts and cashews would be great! Another option is to add more rolled oats, but note that the bites will be a little more delicate. If using oat flour, start with 2 tablespoons and add more as needed. You don't want the mixture to get too dry.
They will stay fresh for 4 days in the fridge and about 1 month in the freezer.
