Quick & Easy Vegan Yogurt

The best quick & easy vegan yogurt, made with 6 basic ingredients. This recipe is ready in 5 minutes and can be made with different berries.

Ingredients

  • 1 block (350-450g) tofu (see notes)
  • 2 cups frozen strawberries (see notes)
  • 1/2 cup cashews, raw or dry roasted
  • 3 tablespoons maple syrup, more or less to taste
  • 2 tablespoons lemon juice, more or less to taste
  • 1 teaspoon vanilla extract

Instructions

  • Add all the ingredients to a strong blender and blend until smooth.

Notes

This recipe is adapted from the 5 minute vegan "yogurt" from Pinch of Yum, which was inspired by a recipe in The Perfect Blend Cookbook. 
You can try this recipe with different berries or other fruits. I tried blueberries and strawberries with success (strawberries was best). Pinch of Yum's version was done with peaches. I only tried using frozen berries, but fresh or thawed fruits may work too.
I tried this recipe with medium-firm tofu and extra-firm tofu. Both worked well. The medium-firm tofu resulted in a smoother yogurt, while the extra-firm tofu resulted in a more firm yogurt (though not quite as firm as Greek yogurt). My extra-firm tofu was a 350g block and my medium-firm tofu was a 454g block. 
3 tablespoons of maple syrup was perfect for my taste. However, you can add more or less to taste. Honey should work as well, though I haven't tried it myself.
Note that the extra-firm tofu version had a slightly stronger taste of tofu. For this reason, you may want to add more sweetener, lemon juice and/or fruit.
Should you add probiotics to your vegan yogurt? No. It's not necessary and you're better off taking the supplement as directed by the brand.
