Easy no-bake thumbprint cookies that are naturally vegan and gluten-free! These cookies are made with only 5 ingredients and require less than 15 minutes of work. Just add your favorite jam!

Ingredients
1cupwalnuts
1cuprolled or quick oats
1cupMedjool dates,pitted
1/2teaspoonvanilla extract
1/8teaspoonsalt
Jam of choice(1-2 teaspoons per cookie)
Water as needed
Instructions
Add the walnuts and oats to a food processor. Process until you get a coarse crumb.
Add the dates, vanilla and salt and process until the mixture sticks together. Add water as needed, 1 tablespoon at a time. (1 tablespoon is usually all I need).
Form 8-10 little balls by rolling the mixture between your palms. Place on a clean surface or baking sheet.
Press your thumb in the center of each ball to form a little well. Fill each well with your favorite jam, about 1-2 teaspoons per cookie.
Store in an airtight container in the fridge.

You can substitute the walnuts for other nuts or seeds. I tried almonds, sunflower seeds and cashews with success, but it does change the taste slightly. Raw or dry-roasted, unsalted will work. Cashews and walnuts were my favorites.Feel free to use any jam you love. I used Crofter's strawberry jam, my favorite!I haven't tried freezing them with the jam, but you can freeze the cookies without the jam and add it when ready to eat.
