I woke up yesterday morning realizing I hadn’t edited the photos or written yesterday’s blog post. That was about 30 minutes before I needed to leave for work. I had a busy day at work and an evening out doing errands, so here I am, on Saturday morning, writing the recipe for this refreshing mango smoothie.

I’m feeling a little behind on my work this week, but it was well worth it. We had a friend visiting from New Brunswick and we spent the week exploring Vancouver and the Okanagan. It’s nice to take a little time off work once in a while… But now it’s back to reality and I have 2 very busy weeks ahead of me before I visit my family in New Brunswick for 3 weeks.

I’m trying to get all my content ready for my time away so that I can enjoy my time with family and friends without worrying too much about the blog. Those weeks will be spent working on wedding things, helping my brother move to Nova Scotia, visiting friends in Saint John, hiking in Fundy and spending as much time as I can with Lola (our family dog that I miss so much!). I’m still going to test some recipes however, and I’ll have my family to try them with me.

Today’s recipe is a simple one, but it’s a great refreshing smoothie for summer.

Here’s what’s packed into this smoothie:

  • Mango (full of vitamin C, plus keeps this smoothie vibrant and green)
  • Ginger (for a little kick)
  • Parsley (trust me, it’s refreshing and delicious)
  • Spinach (for a little green power)
  • Unsweetened soy milk (for protein)
  • Hemp hearts (for more protein, healthy fats and fiber)

You can use your favorite milk here, but I went with soy as it has more protein, which for me, is important in a fruit smoothie. You can also switch the greens or omit the parsley. Smoothies are so versatile and such an easy way to sneak in some fruits and vegetables into your diet.

Refreshing Green Mango Smoothie

Ingredients

  • 1 1/2 cup frozen diced mango
  • 1/2 cup spinach
  • 1/4 cup fresh parsley
  • 2 tablespoons hemp hearts
  • 1 inch fresh ginger
  • 1 cup unsweetened plant-based milk
  • 1/2 cup water
  • 2-3 ice cubes

Instructions

  • Add all the ingredients to a high-speed blender. Blend until smooth.

Notes

Makes 1 large smoothie or 2 small.
I used unsweetened soy milk in this smoothie for more protein. Feel free to use any plant-based milk.
I used spinach, but other leafy greens will work. Just keep in mind that spinach is less detectable in smoothies than other greens.
